Hi, I'm Jamie Purviance, the author of Weber's New Real Grilling. This book is all about the enormous range of recipes we grill today. When I was a kid back in the 1960s, the grill was primarily for me. Pretty much everything else came out of the kitchen. Meat's still a major part of the menu, but look at the other things that we're doing today. It was an amazing array of appetizers, and salads, sandwiches, vegetables, and desserts. Many of the changes in grilling have happened right along with changes in American supermarkets. Wasn't that long ago when ingredients like goat cheese, and chipotle peppers, and panko breadcrumbs were rare ethnic foods that you could only find in specialty shops. Nowadays they're supermarket staples. And this book is built around what we can do today with ingredients found in ordinary supermarkets. So you'll see these ingredients showing up in recipes like our roasted beet and goat cheese salad, chicken with a chipotle barbecue sauce, and scallop and grits with a toasted bread crumb topping. In the spirit of some retro fun, this book also features some old Weber recipes from days long ago when Americans were following one food trend or another. And I've paired each original recipe with a new remix version that reflects today's taste and ingredients. The real core of this book is made up of classic grilling recipes that have been favorites for years. To each one I've just added a little twist. Nothing crazy, just modern riffs on popular themes. So things like these cheeseburgers with a mango chili salsa, or coffee rubbed ribeye steaks with a stout glaze, or the shrimp kabobs with a pistachio tarragon pesto. Through the years the tools and cookware for grilling have evolved too. Used to be that we'd just use a pair of tongs or a spatula. Nowadays we have a lot more accessories that are a lot more things we can do. For example, have you ever made a stir fry or cioppino on the grill with a wok? Or baked a loaf of cheesy beer bread on a piece of stone? These are some of the new possibilities that are part of American grilling today. Of course, we've been grilling for centuries, but how we see it now has changed. Grilling is how we entertain these days. It's how we relax. It's how we reconnect with what matters most to us. Weber's New Real Grilling captures all these contemporary elements, but really focuses on what's never changed. It's fun. It's delicious. That's why we grilled way back then, and that's why we grill today.
