Recipe 1:

Red Grape Compote

Makes 1½ cups

Ingredients:

2 star anise pods

3 cups red seedless grapes

⅓ cup sugar

¼ cup lemon juice (approximately 1½ lemons)

1 tsp lemon zest

Pinch of salt

1 Tbsp unsalted butter

Instructions: 

In a large saucepan, combine star anise pods, grapes, sugar, lemon juice, lemon zest and salt. Bring grape mixture to a boil, stirring to dissolve the sugar. Reduce heat. Simmer for 10 to 12 minutes, stirring occasionally, until grapes burst and mixture is syrupy. Remove from heat. Discard star anise pods. Add butter to the grape mixture. Stir until butter is melted. Let cool.

Tip: Serve with pound cake and vanilla ice cream.

 

Recipe 2:

Red Grapes with Italian Sausage & Onion

Makes 3 servings

Ingredients:

4 Tbsp butter

1 large onion, sliced

1 Tbsp olive oil

1 lb Sweet Italian Sausage links (3- to 4-inch links)

1 lb red seedless grapes

2 Tbsp balsamic vinegar

Salt and pepper to taste

Instructions: 

Melt butter in a 12-inch heavy skillet. Add onions. Cook for 5 to 7 minutes, or until softened. Remove the onions from the pan and set aside. In the same skillet, heat oil over moderate heat until hot but not smoking. Add sausage. Cook for 8 minutes, turning over once, until well-browned. Add grapes to sausage. Cook 10 to 12 minutes, until the sausages’ internal temperature is 165 F and grapes are softened. Add onions back to the skillet with grapes and sausage. Stir in balsamic vinegar, and salt and pepper to taste. Cook 2 to 3 minutes, stirring. 

Tip: Great with sauteed rainbow chard.
